While vacationing on the island of Sifnos in the Aegean Sea, my husband and I had lunch at Restaurant Cyclades. Most restaurants on the island still use wood-burning ovens. Here the chef roasts whole eggplants directly on the coals. Rice stuffed tomatoes and peppers with wedges of potatoes are ready to go in next. Our lunch consisted of "Mestala" oven braised goat, oven baked potatoes, beet greens, stuffed tomatoes and "revythia" 12 - hours oven cooked chickpeas.
