Arugula Salad With Pine Nuts
4 cups baby Arugula
1 apple, golden delicious, cut in pieces
2 tablespoons pine nuts, toasted
1 tablespoon lemon juice, fresh
1 tablespoon extra virgin olive oil
1 tablespoon red wine vinegar
1/2 teaspoon salt or to taste
1/4 teaspoon fresh ground black pepper
Wash and drain arugula. Toss apple pieces with lemon juice.
To toast pine nuts; place nuts in a small skillet and cook for a few minutes on medium heat, stirring continuously. Remove as soon as they begin to turn golden brown. Cool for a few minutes. Toss all ingredients. Serve.
