Mixed Tomatoes Salad with Basil Dressing

Serves 4  

1 - 2 pints Mixed cherry and grape tomatoes,  

2 oz. gruyere cheese,  cubedsmall

½ Granny Smith apple, matchsticks for garnish.

4 tablespoons basil, finely chopped

2 teaspoons red wine vinegar

2 tablespoons extra virgin olive oil

¼ teaspoon salt

1/8 teaspoon black pepper

 Cut tomatoes in half . Spread gruyere  cheese  over tomato slices.  In a small bowl combine all the salad dressing ingredients. Mix well and drizzle over salad. Top with a bundle of apple matchsticks on one side. Serve
