Peach Custard Cake

Sweet and juicy summer peaches are fantastic in this custard like cake. Easy to make and perfect as a summer dessert.

Peach Custard Cake
makes 1- 8X8 sq. cake


1 1/4 cup all-purpose flour
2 teaspoons baking powder
pinch of cinnamon
1/4 cup butter, melted, cooled
3/4 cup sugar, separated
2 cups milk
2 eggs
1 teaspoon vanilla
3 large yellow peaches, peeled and cut in chunks
Confectionary sugar for dusting (optional)

Grease and flour a 9X9 sq. baking dish. Preheat oven to 400 degrees.
Combine flour with baking powder and cinnamon. Mix in eggs, 1/2 cup of the sugar. Add 3 tablespoons of butter alternating with milk. Add vanilla. Stir in peaches and distribute well throughout the batter. Pour and spread evenly in prepared pan. Sprinkle remaining sugar on top. Bake in preheated 400 degrees oven for 35-40 minutes.   Remove from oven. Cool and cut in squares. Sprinkle additional confectionary sugar if desired.
