One half cup of cooked beans contains 61 mg and one half cup cooked Swiss chard contains 75 mg. Women need 350 mg and men need 400 mg of this macro mineral. This recipe supplies more than one third of your day’s needs. Magnesium  helps to maintain normal nerve and muscle function, supports a healthy immune system, keeps the heart beat steady, and helps bones remain strong. It also helps regulate blood glucose levels and aid in the production of energy. Magnesium is plentiful in beans and leafy greens such as Swiss chard and beans. Beans with Swiss chard and tomatoes, serves 2 1 small bunch red Swiss chard, leaves only. 1- 15 oz can cannelini beans, rinsed and drained or home cooked 1-15 oz can diced tomatoes ¼ cup reduced-sodium chicken broth 1 tablespoon chopped basil ¼ teaspoon hot pepper flakes 2 tablespoons grated Parmesan cheese 1/4 teaspoon salt or to taste Heat oil in a medium nonstick skillet. Add garlic, cook for one minute. Add Swiss chard and sauté over medium heat, 2-3 minutes. Season with salt to taste. Add tomatoes and chicken broth and cook for 10 minutes, stirring occasionally. Add beans, basil and pepper flakes and simmer 3-5 minutes. Remove from heat, transfer to serving dish and sprinkle with parmesan. Tip: Kale, escarole or spinach make great substitutions for the chard. There is no real nutritional difference between red and green Swiss chard.</image:caption>

      <image:caption>Aspic is a savory  dish in which ingredients are set into a gelatin made from a meat stock or consommé. When used in non-savory dishes it's called gelatin salad. I like to take ordinary ingredients and use them in unexpected ways. Here I take the gelatin and mix it with spices then add fruit and crushed cookies for a surprising take on a fruit salad mold. Cutting it into interesting shapes makes for an appealing presentation. Proving once again - healthy eating is fun and tasty! Enjoy! Ingredients 2 envelopes plain gelatin 1 inch ginger 1 cinnamon stick 3 tablespoons maple syrup 2 cups water, separated 1 pear, peeled and cube ½ inch. 1 orange, sections only cut out 1 banana, small, sliced ¾ cup raspberries 4 Italian amaretti cookies In a small bowl, soften gelatin in 1 cup of water. In a small sauce-pan combine 1 cup of water, pear, cinnamon stick, ginger and maple syrup. Bring to a boil, reduce heat and cook for five minutes.  Drain the spiced liquid and add to gelatin bowl to help dissolve gelatin. Place pear cubes in a bowl of desired shape and add orange sections, banana and raspberries. Pour dissolved gelatin in bowl and sprinkle with crushed amaretti cookies. P.S. Smoked Salmon Salad with Apples, Walnuts and Yogurt Dill Dressing Serves 4 Salad 4-6 cups baby greens 1–cup cherry tomatoes 1- tablespoon olive oil ¼ cup walnuts, roughly chopped 4 -6 oz smoked salmon 1 Granny smith Apple, thinly sliced   Yogurt Dill Dressing ½ cup plan low-fat yogurt 2 tablespoons olive oil 1- tablespoon water 1 tablespoon fresh dill, finely chopped 1 tablespoon white wine vinegar ¼ teaspoon white pepper ¼ teaspoon salt Combine all in a bowl.  Let flavors meld, for about 30 minutes before using. Keep tightly covered in the refrigerator.  Ideal as a salad dressing or a sauce on salmon or in place of mayonnaise as a sandwich spread Arrange baby greens and tomatoes on platter and drizzle with olive oil.  Sprinkle with walnuts. Layer with smoked salmon and top with yogurt dill dressing. Arrange apple slices on top. Serve.</image:caption>
