Greek Village Salad

Serves 4

 2 large tomatoes, cut in 8 wedges

 2 medium cucumbers, or an English cucumber, sliced ¼ inch thick

 1 red onion, thinly sliced

 ½ cup black olives, pitted

 1 bell pepper, finely sliced

 2 tablespoons red wine vinegar

 3 tablespoons extra virgin olive oil

 6 oz feta cheese, sliced or cubed

 1-teaspoon oregano, dried

 Salt to taste

 

In a large salad bowl, combine tomatoes and cucumbers. Add onion, pepper, and black olives. Drizzle the vinegar, the oil, and salt. Add feta and sprinkle with oregano. Serve.
